Directions
- Clean mushroom and remove stem and gills with a sharp knife, dice stems and mix with feta, salt and pepper. Preheat oven to 375 degrees F.
- Pre-bake mushrooms face down, preferably on a grate or cooling rack placed on top of a baking sheet, for 5-6 minutes. This will prevent the mushrooms from becoming too soggy when stuffed
- Stuff mushrooms with feta mixture and bake for another 6-8 minutes or until tops of feta turn slightly brown and mushroom has become tender to the touch
